8 fresh sardines, cleaned and heads removed ( if not available, used tinned )6 tbsp olive oil
2 tbsp white wine vinegar
2 garlic cloves, peeled and chopped
1 red chilli, deseeded and chopped
2 tbsp finely chopped parsley
lemon wedges to serve
• Place sardines in a shallow dish. Mix the olive oil, wine vinegar, garlic, chilli and parsley together and pour over the sardines. Leave to marinate for one hour, turning once.
• Preheat the grill. Remove sardines form marinade and place on the grill rack. Drizzle with the marinade. Cook for 12 minutes, turning once and basting occasionally with marinade.
• Serve hot, drizzled with the pan juices and accompanied by lemon wedges.
